Endless Summer Tacos

Who doesn’t love tacos and who doesn’t wish summer would stay around longer? Well, combining these two ideas, I present to you Endless Summer Tacos. A light and simple meal you can enjoy year round and when summer is nothing but a distant memory you can conjure up that summer nostalgia with these amazingly simply and delicious tacos.

Most Mexican food centers around a solid salsa, how many restaurants have you been to and thought “Ph man that salsa is sooo good!” Well, this recipe does the trick! There are so many salsa on the market but nothing compares to making something fresh.

Restaurant Style Salsa

1 can Plumb Tomatoes

1 Bunch Cilantro (Rough Chopped and de-stemmed before combining, SAVE some for your tacos!)

3 Garlic Cloves (Peeled)

1 Small White Onion (or 1/2 Medium size Onion) (Peeled and rough chop)

3 Tsp Fresh Lime Juice

1 ½ tsp cumin 

1 tsp salt

¼ tsp sugar

Put all ingredients in a food processor and pulse until combined. DONE...Super simple!

Turkey Tacos

1# Ground Turkey

1 pk Taco Seasoning 

1 Avocado

Fresh Cilantro (use some from above recipe)

1 Lime

Low Fat Sour Cream 

Cotija Cheese 

Corn Tortillas --- (My preference is to get these from a local restaurant that makes them daily, but when that is not an option check out Trader Joe's they have a few decent options. This is one place where spending a little extra goes a long way in making killer Taco's so try and find something fresh).

Prep: Halve your Avocados de-pit and cut into cubes, and scoop out.

While browning turkey meat add taco seasoning. Stir over med high heat until cooked through, about 5 minutes. Set aside.

Take your fresh tortillas and warm or even better place over flame and give them a nice light char.

Now comes the easy part assembling: put some turkey, avocado cubes, cotija cheese, fresh cilantro, a little lime juice, and a dollop of light sour cream and fresh salsa and you have a great healthy Turkey Taco. I like to top my taco with a little shredded cabbage (makes me feel like I had my veggies :-)

Finish with some fresh chips (Chica's are my favorite), and enjoy!
