Amazing Asian Slaw
Before summer is over enjoy this super simple, amazingly delicious, healthy, light and refreshing salad, (want a few more descriptions, fantastic, epic, crunchy, ok you get the idea). This recipe is a great side dish for your next asian dinner like teriyaki chicken or topped with grilled chicken or steak and it makes for a perfect meal.
Ingredients:
Cabbage 1/2 head finely chopped (or @3 bags precut)
Shredded carrots ¼ small bag precut OR 2 carrots shredded
Scallions 1 bunch chopped
Cilantro ½ bunch chopped
Sliced almonds toasted 1/3 cup
Toasted sesame seeds 1T
*Purple Cabbage (for added color if desired)
(Other Optional Items Grilled Chicken, Mandarin Oranges, Peanuts, Edamame, Fried Wantons, Ramen Noodles, be creative and enjoy)
Dressing
1/4 C sugar
1/4 C White Vinegar
Sesame Oil 1 teaspoon
Salt 1/2t
Pepper 1/2t
Optional (1T Lite Soy Sauce)
Whisk dressing together and pour over salad approx. 15 minutes before eating, mix well and enjoy!
